Holiday Potluck: 3-Ingredient Apple Spice Cobbler

The holidays are a busy season and time can get away from you when it comes to the events that stack up in your family’s calendar. This recipe is a versatile way to make a “quick cobbler” for any upcoming event. Check out the tips below for substitutions that will make this dish feel new nearly every time.

Prep time: 5-10 minutes
Bake time: 30-40 minutes
Total time: 35-50 minutes
Ingredients:
½ cup unsalted butter, melted (1 stick)
1 box spice cake mix (about 13-14 oz.)
2 -21 oz. cans of apple pie filling
Directions:
1 – Preheat oven to 350°F. Prepare a 9×13 baking dish or disposable aluminum baking pan with a non-stick spray. Put the pie filling into the baking dish and spread it out as evenly as you can with a spatula.
2 – Melt the butter in a medium sized microwave safe bowl for about 1 to 1 ½ minutes. Add the cake mix to the butter and combine until it makes a crumbly consistency. Do NOT form a dough with it.
3 – Sprinkle the crumbles formed by the butter and cake mix over the pie filling in the baking dish. Pay attention to the corners and making it a pretty even layer. It will expand just a bit when baking.
4 – Bake for 30-40 minutes, until the top starts to get a little brownish on the top. Carefully remove and let sit for about 15-20 minutes before serving. It’s also best to wait 20 minutes before covering it for transport but not crucial. Serve on its own or with ice cream using a large serving spoon.
It’s gooey with a topping that has a little crispiness and a lot of melt-in-your-mouth flavor!
TIPS:
- Try using Butter Yellow cake mix instead for a more traditional cobbler flavor
- Definitely avoid the generic brand on this one – there is a lot more fruit in the name brands
- Use can actually substitute almost ANY flavor of cake mix OR variety of pie filling to feel like you’re bringing something different to the party each time!
- Some of my favorite combinations are: butter yellow with peach or blackberry, devil’s food with cherry or raspberry, spice with pumpkin pie filling (don’t forget to add the evaporated milk and eggs to prepare the pumpkin pie filling)
- Add a little something extra to the topping: cinnamon sugar, mini chocolate chips, peanut butter chips, or butterscotch chips (white chocolate drizzle after you pull it from the oven is tasty, too)
- You can make TWO smaller cobblers by using only one can of fie filling in two smaller prepared baking dishes and splitting the crumble topping between them. Baking time would be about the same (see how it looks after 25 minutes)
