Quick One-Pan Family Meal Recipe:
Chicken + Veggies

You know you’re too busy (and exhausted) to make a fancy gourmet meal tonight, but you just had pizza last night! So – what do you do? It’s time to break out the big sheet pan and some seasonings for a quick and easy meal the whole family will enjoy. You can also make substitutions to our recipe below to accommodate your picky eaters. Feel free to use your favorite seasoning mix or Italian dressing in place of your preferred oil to make your meal a little zestier and more unique! You could also put barbecue sauce on the chicken halfway through the cook to make the same basic meal feel new and different.

Ingredients:
– 4 large boneless skinless chicken breasts
– 16-20 oz. green beans, trimmed to your preferred length
– 1.5 lb. bag of gemstone potatoes, halved (quartered for the larger ones)
– Extra light olive oil or your preferred high heat oil
– Preparation seasonings (to taste): kosher salt, white pepper, black pepper, onion powder, garlic powder, paprika.
– Optional Seasoning: Italian seasoning, Parmesan Cheese
Tools:
– Large Sheet Pan
– Foil or Silicone mat to line sheet
– Tongs
– Probe thermometer
– Bowl (optional)
– gloves (optional)
Directions:
– Preheat your oven to 450°F and do any trimming of the chicken and green beans. I like to score the top of the chicken to get more flavor into the meat and help them cook faster and more evenly. Halve the potatoes at this point, too.
– Put foil or a silicone mat on your sheet pan. Place the potatoes on the sheet pan and drizzle with oil and all the preparation (prep) seasonings listed above. Move them to one side but keep them in one layer.
– Place the chicken on the sheet pan, also coating with oil and the prep seasonings above. Place them scored size down for the first half of the cooking process. Leave space to add the green beans later.
– Place the sheet pan with seasoned potatoes and chicken in the preheated oven for 10-12 minutes.
– During this part of the cooking process, toss the green beans with a drizzle of oil and prep seasonings listed above. You can do this in a bowl or a bag.
– After the first 10-12 minutes have finished, pull the sheet pan out of the oven and toss the potatoes a bit with your tongs and add Italian seasoning to them. Also, flip the chicken breast so the scored size is up. Add the green beans in the empty area of the pan, they don’t need to be in a single layer, it’s okay if some get a little brown while others steam below – everyone has different tastes.
– Cook for another 10 minutes. At this point, use your probe thermometer to check the thickest part of the biggest chicken breast. It should be at or close to 160°F. This is great. Now, set your oven to a low broil for 2-3 minutes to allow a little more browning to occur on everything in the tray.
– If you don’t have a probe thermometer, as long as you see clear juices running from the chicken or pooling below it, they should be finished cooking. If you have a probe thermometer, the chicken should be at least 165°F in the thickest part of the biggest chicken breast. Remove the tray from the oven and sprinkle the potatoes with parmesan cheese (this is optional, but delicious). Cover loosely with foil for 5 minutes to allow the chicken to rest while the veggies stay perfectly warm.
– It may be easier to pre-slice the chicken breasts before serving. It’s easier to portion everything out and helps little ones that have difficulty cutting things. Serve – And ENJOY! (Good news – you won’t have much to clean up after!)
A few tips:
– You can also try adding lemon slices onto the chicken breasts for different flavor or squeezing a little lemon on the green beans when they are finished to add freshness.
– You may have some awesome leftovers. You can meal prep them for future work lunches or save the chicken for an easy chicken add-in for a meal later in the week. We LOVE chicken fried rice!
– You can include the kiddos in seasoning the green beans to help them feel included and start teaching them how to prepare their own meals – just make sure everyone washes their hands before preparing the food – and after!
